Abstract

A comparison of five levels of N fertilizer in the Lockyer Valley showed that N above that required for normal plant growth during winter months had no effect on the specific gravity or the colour of potato crisps. Poorly-coloured crisps were produced only from potatoes in the lower specific gravity range. These had the highest reducing sugar, free amino acid, and vitamin C concentrations.
